The Vineyard The Wine Cellar

The process begins outside the wine cellar with the grape picking where a first selection of the grapes occurs.

The grapes are then transported in 20 kg boxes to the wine cellar and are subject to a selection table where the “bad” grapes are withdrawn.  

The grape reception takes place outside the wine cellar: the grapes are squeezed and the stalks are taken out.  

Inside the cellar there is a round stainless steel tank with a 10.000 litre capacity and two fermentation stainless steel wine vats, one of 8.000 litres and one of 10.000 litres, (called Ganimede) that have different vinification and automatic systems accompanied by sophisticated temperature controlling processes.  

This type of wine vat has the advantage of accumulating the CO2 that is freed during the fermentation process and using the must dispensing with the use of pumps. Another of its characteristics is the fact that it can achieve extremely aromatic and fruited wines with excellent colours.  

There are still two stone tanks which have interiors coated with stainless steel with a 6 tonne capacity and temperature control. In these tanks the grapes are treaded in the traditional way: by foot.

The wine cellar also has deposits (six with 10.000 litres, four with 5.000 litres and two with 2.500 litres) where the wine is kept until it is clean and a pneumatic press that takes the best of the must without damaging the seeds or other green parts.

The barrels´ room is in a lower location than the wine cellar in order to take advantage of gravity to fill up the barrels without using pumps. In this room the original rock of the terrain was used as one of the main walls and the others are made of slate providing a good and constant room temperature all year round. Here we can find the barrels where the wine is going to prepared. There are twenty barrels with a 225L capacity and eighteen with a 650L capacity, all made of French oak. 

In the wine cellar complex there is also an innovative underground cellar made from the original terrain rock with excellent temperature and humidity levels and with a capacity for 8.000 bottles and a warehouse for the final product with a capacity for 90.000 bottles.
